Tonight is my evening at home without Dustin. He is at church leading a class on mentoring. I just made a lovely little dish called, "Asparagus-and-Ham Casserole" from CookingLight.com.
The only change I made was using skim milk rather than whole milk.
I think it turned out pretty good. I think next time I would put a little bacon in it to give it a richer flavor, and maybe use whole milk to thicken up the mixture. Overall, it is good for being a fairly low-cal meal!

As some of you have been wondering from my previous post, "What is the big change, Lindsay?" Well.... I GOT A NEW JOB!! I must say that I am QUITE excited about this great opportunity! I was not originally looking for anything because I totally love my boss, underground parking spot, and vacation whenever the Dr. takes a vacation. However, a friend of mine suggested that I should check out an internal communications position at her company that would report to her; I could not resist checking it out.
Sure enough, the job sounded awesome! I sent in my application and about four interviews later, I received the job offer! D & I are so thrilled! I know it is going to be a challenge, but one that I am SO ready for. My head is spinning with ideas already. My first day will be March 1st. As a rule, I don't usually blog about work-related things because you never know who is reading..... :-) BUT I couldn't help but write about this!!!
SO, that is my big news. Back to the corporate world!
